Serves 8-10
This is the kind of dip that only lasts minutes on the table, so you’ll probably want to make to batches! On normal nights, I’ve never survived with less than two dishes of it, and don’t even get me started on those nights where I have to share with relatives!
1 ¼ cups of sour cream
¾ of a cup of softened cream cheese
2 cups of lettuce (shredded by hand or in a food processor)
1/3 of a cup of green, red, or yellow bell peppers (I enjoy mixing all three, as some of you may know from reading my other recipes)
¼ of a cup of diced onions (I like to use about 1/3 or ½ of a cup, but no one likes to spend the evening near me afterward, so if you like it like that, you may want to reconsider…)
2 cups of shredded cheese (this dish can be made with less cheese if you prefer—about 1 ½ cups, but I’m a cheese freak, so I use two)
2/3 a cup of your favorite taco sauce (simply use a mild salsa and it’s delicious!)
1 med. to large diced tomato
Some Tortilla chips
In one of your smaller mixing bowls, combine the cream cheese and the sour cream and stir until the mixture is smooth and not lumpy. Now, spread the mixture on a large platter (try making it into about an 8 or 9 inch circular shape).
Once you are up to this step, simply sprinkle on the lettuce, the peppers, the onion, and the shredded cheese in layers upon layers.
Drop the tomatoes on top and serve with the chips.
This goes great as the filling sauce in tacos, burritos, chimichangas or almost anything else you can think of.
