This will be the first edition of a series I am hoping to get started on entitled “Simple, But Delicious.” The aim is to show you some really yummy dishes that are incredibly easy.
So, the quesadillas are kind of the quintessential simple and delicious Mexican-style dish. Let’s dive into one of my favorite recipes:
If you want to feed someone for a meal, simply double the recipe. What I write down will be just enough for a nice mid-day snack of sorts.
What you’ll need:
2 large tortillas (I like the wheat tortillas lately.)
1 ¼ cups of shredded cheese (if you don’t feel like breaking out the measuring items right now, just grab a bunch of cheese and plop it on there. I always add more anyway.)
½ a bell pepper (or just grab a small one.) diced.
¼ onion peeled and diced
**optional, but not really optional:
¼ teaspoon of chile powder
¼ teaspoon of garlic salt
¼ teaspoon of pepper
(3/4 teaspoon of the mix if you prep it beforehand)
really optional:
leftover meat (beef, pork, chicken, steak, etc.)
**Well, I know you’re all thinking “Tortillas, cheese, that’s all I need, right?” but if I just wrote a recipe about cheese melted on a tortilla, would I even have this gig? Nuh uh.
I suggest you prepare some tasty seasonings beforehand. If you’re like me and you eat a ton of quesadilla snacks, you’ll make good use of a simple mix that you can just store on the shelf. It’s easy to make, too. Just do one part chile powder, one part garlic salt, and one part ground black pepper. If you want to add something of your own, that’s fine too. Just don’t do anything that’s gonna be gross or else I’ll get the blame later on!
Preparation:
First, decide if you’d rather make this on the stove or simply nuke it. If you choose the latter, you know what to do, but I definitely prefer the former. Place your tortilla on a flat surface, then add to one side, the cheese, pepper, onion, (meat, if you are using some) and last but not least, the seasoning mix. Now fold over the other side and you’ve got yourself a raw quesadilla. Now, microwave and serve, or place in a skillet with a bit of oil that you have pre-heated. Cook for about 3 minutes on each side, remove, and serve.
