Oh my gosh! These things are so freaking delicious it drives me crazy! I once ate them exclusively for an entire week and a half! Oh, if only I truly could do that, though. So yummy! One thing you MUST make certain you do is use the ranch that is in the chip dip aisle. You want it to be a bit thicker than that stuff that comes in a bottle. It needs to either be in a jar or in a plastic tub like sour cream. So, now that that’s out of the way, let’s set off toward burrito ecstasy!
4 Large Tortillas (if you are feeding less who eat more) or inversely…
6 Medium Tortillas (if you are feeding more who eat less)
2 bags of pre-cooked store-bought chicken chunks or strips (depending upon preference)
2 bell peppers (red, green, or yellow depending upon preference)
2 ½ cups of thick and creamy ranch dressing dip
1 tablespoon vinegar (red wine or white depending upon preference—I’m sounding like a broken record!)
1 tablespoon olive oil for mixing (in this case, olive oil is the necessary choice as you will simply be mixing it with the ranch and vinegar to create the sauce for the burrito filling. In any of the recipes where you are frying, you can substitute it with your favorite fry liquid, but as for the edibility, olive oil is king.)
¾ of a cup of olive oil for frying the chicken (now this is where you can choose something else, if you’d prefer.)
First, begin by heating the frying oil in a medium skillet (don’t burn it!)
Next, toss the chicken into the pan in order to heat it up and possibly sear and blacken it a tiny bit (it makes it so yummy!) Heat for about five minutes, give or take.
Then, mix the ranch dip, vinegar, and olive oil (just that one tablespoon, remember! You don’t want the ¾ of a cup in there!) This is done in order to thin the ranch a tiny bit. Theoretically, you could use a thinner ranch and then thicken it up a bit, but this is MUCH easier, so I decided to use this method instead.
Now that the chicken is heated, remove it from the pan and mix with the sauce you’ve just created (make sure not to dump the chicken from the pan into the mixing bowl as you may dump some extra oil into the mix. YUCK!)
Simply mix this and you’re done with the prep work. Let everyone else fix their own burritos! You’re not a slave in this household, remember!
