So, you’ve got to feed some people and you don’t know what sort of dish to make? Well, this one will please some of the biggest health nuts on the planet (unless you want to turn this into a chicken salad dish. It’s not the healthiest dish, but it is quite a bit healthier than a lot of stuff that tastes this good), and you don’t need to sacrifice any flavor, either. That’s what makes the rest of us happy. It’s delicious and everyone loves it! They’re incredibly simple, as well. The only choice that you’ll have to make is if you want to make the chicken salad version that is fantastic for lunch (if so, I have a great chicken salad recipe that I’ll work on posting), or the spicy Mexican version. Serve it with some brown rice and it’s sure to become a weekly favorite!
6 large Multi-grain tortillas
3 bags of refrigerated pre-cooked chicken
Salsa (If you want to buy it in the store, that’s no big deal. I have a few tasty recipes for that, as well though.)
1 bag of spinach (washed and towel-dried)
Now, there is very little prep work that goes into these, so you’ll have free time to spend with those you care about afterward. The only real prep work goes into the chicken salad edition of this dish.
When making the spicy Mexican wraps, simply place everything in its own serving bowl on the table and dig in!
When making the chicken salad wraps, add chicken and mayo to a large bowl and mix. (Pre-shred the chicken if you prefer it to the chicken chunks.) Once chicken and mayonnaise are mixed, add your apple and grape pieces and lightly mix once more. Now you’re ready to serve it! See how easy?! I love ‘em!
