Mmmmm, these make my mouth water any time their mentioned! My brother and I love them! If you prefer, you may substitute the jalapeno for green bell pepper or another pepper you think might go well with the other flavors, but the jalapeno is the perfect one, in my opinion.
1/4 lb shredded pre-cooked chicken (store-bought or shredded at home)
¼ cup of jalapeno peppers (not the pickled ones. Fresh is best, in this case especially!)
½ cup of unflavored cream cheese (unflavored is best for just the regular dish, but there are many good flavors that would compliment it. Chive cream cheese, for example, is a delicious addition. I would imagine a garden vegetable cheese would taste excellent, as well! You may even purchase a jalapeno cream cheese and cut out a step, if you’d like.)
1 large tortilla
2/3 cup of vegetable oil (it’s the oil that these will be fried in, so you can use whatever kind you like. Vegetable oil is just a cheap recommendation.)
1 large skillet (If you have a deep fryer, that’s even better, but you’ll need a lot more oil.)
If shredding chicken at home, place chicken, cream cheese, and jalapeno in food processor and only lightly chop it all (you don’t want some kind of strange chicken paste or smoothie. Don’t worry, it will blend itself. If you would like to add two capfuls of a weak white vinegar, that would be fine, but don’t add too much!)
If chicken is pre-shredded, place chicken, cream cheese, and jalapeno in a mixing bowl and mix together with large spoon.
Now that you’ve got your filling, put it on your tortilla (making sure it’s not too full to fold it) and fold it burrito style. Just fold opposite ends inward toward the filling and roll it from one side to the other.
After it is securely folded, place it in the skillet (or deep fryer) and fry until golden brown. Since the chicken is pre-cooked, it only needs the heat from this frying process. If you would like to cook your chicken at home, you can do that as well. Just add that step to the beginning of this recipe and you’re good to go.
