Set oven to 350F. Season chicken and bake, along with Sweet Potato until cooked/soft.
When chicken is done, take out of oven and shred using a fork. Then fry in a pan with spinach, until the spinach wilts.
Top the Sweet Potato with chicken and spinach mix. It helps if you carve a little bit out of the Sweet Potato to create a “bowl” shape. Top with low-fat cheese if desired and serve!
